What is the best color keyboard to use if I am having a difficult time seeing the letters on the keys?
Right now, I have a black keyboard with grey letters, and I need to turn on a bright light in order to be able to see the letters.

I can totally relate to your situation! My keyboard sits on a drawer that slides under my desktop, and I often type with it only partially exposed. Most of the time, I type by touch only, but when I need to look at the keys for one reason or another it was hard to see.
I finally solved my problem with a Logitech wireless illuminated keyboard. The keys are laser-etched and backlit. No matter what time of day I am typing, I can always see my keys.
A less expensive option might be stickers to go on your keyboard. I have seen yellow keyboard stickers with black letters.

I’ve actually seen a yellow keyboard with black letters on it. Black on yellow is the most visible contrasting colour combination you can have. But of course you would still need a light on in dark areas, or at night. In which case the Logitech may work better for you.
I’m feeling from the question that you are not a touch typer. If so I suggest you learn, Mavis Beacon Teaches Typing is a good programme to use. Probably pick up a copy on eBay for next to nothing.
